A vegetable unsung
So as part of my New Year (or The Year of VV as I like to call it) I’ve decided that it’s time to stop whining about the recent increase on the scale, and the pants that don’t button quite the same way anymore and to Eat Better and Move More. I’m not all the sudden crash dieting or ridiculously rationing or sweating on a treadmill for hours on end. I’m taking baby steps. I’m making conscious choices to eat healthier and setting aside at least 20 minutes per day to move. I’m not doing a certain workout routine or anything in particular. Let’s be honest, I’m 5′6″ and weigh 130ish and wear a size 4/6. I’m not obese, it merely a lifestyle tweak.
Anyhow.
Thus leads me to post about a vegetable I’ve long loved, and have neglected for years. It’s tasty, versatile and a great snack, yet few seem to have heard of it. May I present…Kohlrabi! According to Wikipedia kohlrabi tastes like “a broccoli stem or cabbage heart, but milder and sweeter, with a higher ratio of flesh to skin. The young stem in particular can be as crisp and juicy as an apple, although much less sweet.”
But..don’t stop there. Go ahead, remove the ribs of the leaves, blanch, saute’ and and season. Delish!
